Summer is about freshness w/ a slight of sweet. I think this fast and easy cake is perfect for it. I let the kids help with the cake and whipped cream. My kitchen right now looks like I let them paint it in batter and whipped cream, but we for sure had a good desert for dinner tonight. Besides I will put on Cinderella and we can pretend to be her as we clean up the kitchen.
First, slice two large simi ripe peaches, layer them on a sprayed baking dish, I used a square rippled one. Next do your vanilla cake recipe as directed just add 1 tbsp of vanilla & 1tbsp of apple pie spice. yeah, this may seem to be too warm of a cake but I promise it is refreshing when put together. Now if you do two medium size cake dishes or one large one does not matter, though if you use the two small you can do a layered cake which is always a little more fancier. Pour the batter over your peaches and sprinkle pine nuts on top. Put it in the oven and bake as the cake’s box instructed. You might want to add a few minutes because the fruit does mess with the baking time.
When done let cool, while cooling whip up your whipped topping. You will need whipping cream, sugar, and vanilla. I usually do a half of a carton to 1 cup sugar and 1 tbsp vanilla, but best advice is go for you taste. Beat it until stiff in a large cold mixing bowl. I have not idea why the cold bowl but I was taught to do it that way.
